School lunch program renews commitment to local food

School lunch program director and superstar chef Jonny Erskin knows how to cook from scratch, a unique skill for school cook.
However, one ingredient that has always be missing from Jonny's homemade dishes and recipes is locally and organically
sourced food. While the kitchen has always made every effort to source food locally "whenever possible," this new school
year has significant changes in food sourcing at ICS.

Favorable arrangements with local meat producers at West Bay Farm, Native Maine Food Distributors, and the ICS Horticulture
program has allowed the ICS lunch program to begin to serve meals composed almost entirely of local ingredients. Jonny realizes
the important role he plays in kids health, "for some of these kids, this is the only real meal they will get all day...it might as
well be made with real food."
